Well, In the manufacturer races i know every car's performance is the same. These races are won by pure skill (or you can set the skill level lower if you can - i forget) Main thing for these races, don't touch other cars, and don't go off the track. Your brake is your friend in Forza. If the suggested line is on, push the limit but don't take the line to an orange color. (yellow is best and gives optimal speed for the race line) Your race line is very important. ALWAYS try to hit the apex of the corner. Swing wide, move to the inside, and then swing wide on the exit. If cars are on the inside, give them room so that your car isn't damaged.
As for most of the other races, (say, the first few career races) almost all the cars are D class...just make an A class car and bam! instant win (if you know how to drive them)
If you want my opinion (and this is based from Forza 1 and 2) A and B class cars are the most stable in the game if you know how to tune. S class is nice, but is usually overpowered and causes alot of lift throttle oversteer. (When you hit the accellerater and it sends you into a spin)
My big piece of advice to you, jump in a B class car and run around the tracks in practice mode. This will help you find the racing line, and give you experience driving the tracks.
